1 cup rolled oats

1 cup all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground cardamom

1/4 teaspoon ground cloves

1/4 teaspoon ground nutmeg

1/2 teaspoon salt

3/4 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup raisins or chopped dried fruit (optional)

1/2 cup chopped nuts (like walnuts or pecans, optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and lining two baking sheets with parchment paper.

    Mix the Dry Ingredients: In a large bowl, combine the rolled oats, flour, baking soda, cinnamon, ginger, cardamom, cloves, nutmeg, and salt. Whisk them together until well combined.

      Cream the Butter and Sugars: In another bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

        Add Egg and Vanilla: Beat in the egg and vanilla extract until fully incorporated into the butter mixture.

          Combine Wet and Dry: Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. If using, fold in the raisins or dried fruit and chopped nuts at this stage.

            Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, leaving space between each cookie.
