Ingredients

8 slices of sourdough bread

8 oz turkey breast, sliced (deli or leftover)

4 oz sharp cheddar cheese, sliced

6 slices of crispy cooked bacon

4 tbsp mayonnaise

1 tbsp Dijon mustard

1 tbsp olive oil or butter (for grilling)

Salt and pepper to taste

Fresh arugula or spinach (optional for garnish)

Instructions

Prep the Spread: In a small bowl, mix together the mayonnaise and Dijon mustard until well blended. Set aside.

Assemble the Sandwich: Take 4 slices of the sourdough bread and spread a generous layer of the mayo-Dijon mixture on one side of each slice. On the unspread side, layer the turkey slices evenly, followed by crispy bacon and slices of sharp cheddar cheese.

Top it Off: Place the remaining 4 slices of sourdough on top of each assembled sandwich, mayo side down.

Grill the Sandwich: Heat a skillet over medium heat and add olive oil or butter. Once hot, carefully place the sandwiches in the skillet. Use a spatula to press down gently on the sandwiches.

Cook to Perfection: Grill for about 3-4 minutes on one side until golden brown and the cheese is beginning to melt. Carefully flip the sandwiches and grill the other side for an additional 3-4 minutes.

Check for Doneness: Once both sides are beautifully browned and the cheese is gooey, remove the sandwiches from the skillet.

Serve: Cut the sandwiches in half and garnish with fresh arugula or spinach if desired. Serve hot with your favorite side!
