8 slices sourdough bread

1 lb deli turkey breast, sliced

6 slices thick-cut bacon

8 oz sharp cheddar cheese, sliced

1/2 cup mayonnaise

2 tbsp Dijon mustard

1 tbsp fresh herbs (parsley or chives), chopped

2 tbsp butter, softened

Salt and pepper to taste

Optional: lettuce and tomato slices for garnish

Instructions
 

Prepare the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove and place on paper towels to drain excess grease. Reserve a tablespoon of the bacon drippings.

    Mix the Spread: In a small bowl, combine the mayonnaise, Dijon mustard, fresh herbs, salt, and pepper. Mix until well combined.

      Assemble the Sandwiches: Spread a generous layer of the mayo mixture on one side of each slice of sourdough bread. On the unspread side, layer turkey slices, crispy bacon, and cheddar cheese.

        Top It Off: Close the sandwiches with another slice of sourdough, mayo-side facing in.

          Cook the Sandwiches: Heat a large skillet over medium-low heat and add the reserved bacon drippings. When hot, add the sandwiches and cook for about 4-5 minutes on one side, or until golden brown.

            Flip and Butter: Carefully flip the sandwiches and spread a little softened butter on the tops. Cook for another 4-5 minutes, pressing down gently with a spatula to ensure even melting.

              Melt the Cheese: If the cheese hasn’t fully melted by the time the bread is golden brown, you can cover the skillet with a lid for a minute to help the cheese melt.

                Serve: Remove the sandwiches from the skillet, slice in half, and serve hot. Add lettuce and tomato if desired.
