4 medium-sized potatoes, peeled and diced

1 large head of fresh broccoli, chopped into florets

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable broth

2 cups sharp cheddar cheese, grated

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika (optional)

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Potatoes and Broth: Stir in the diced potatoes and vegetable broth. Bring to a boil, then reduce the heat to medium-low and let simmer for about 15 minutes, or until the potatoes are tender.

      Incorporate Broccoli: Add the chopped broccoli to the pot and continue to simmer for another 5-7 minutes until the broccoli is vibrant and tender.

        Blend the Base: Use an immersion blender to blend the soup until you reach your desired consistency. For a chunkier soup, blend only half of it, leaving some diced potatoes and broccoli intact. Alternatively, carefully transfer the soup in increments to a regular blender.
