Cheddar Jalapeño Breakfast Biscuit Cups

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon cayenne pepper

1/2 cup cold unsalted butter, cubed

1 cup shredded sharp cheddar cheese

2-3 fresh jalapeños, diced (seeds removed for less heat)

3/4 cup buttermilk

4 large eggs

1/2 cup milk

1/2 cup diced cooked bacon or sausage (optional)

Fresh chives or green onions for garnish

Preheat the Oven: Preheat your oven to 425°F (220°C). Grease a muffin tin or line it with muffin liners for easy removal.

    Make the Biscuit Dough: In a large mixing bowl, whisk together flour, baking powder, salt, and cayenne pepper. Add the cold, cubed butter and, using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

      Add Cheese and Jalapeños: Stir in the shredded sharp cheddar and diced jalapeños until evenly distributed.

        Add Buttermilk: Pour in the buttermilk and mix just until combined. Do not overmix; the dough should be slightly sticky.

          Shape the Biscuit Cups: Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1-inch thick. Cut into squares or circles that will fit into the muffin tin. Press each piece into the bottom and up the sides of the muffin tin to form cups.

            Prepare the Egg Mixture: In a medium bowl, whisk together the eggs, milk, and any optional cooked bacon or sausage until well combined. Season with a pinch of salt and pepper to taste.

              Fill the Cups: Carefully pour the egg mixture into each biscuit cup, filling them about 3/4 full.

                Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the biscuits are golden brown and the egg is set.

                  Cool and Serve: Let the biscuit cups cool for a few minutes in the pan before gently removing them. Serve warm, garnished with chopped chives or green onions.
