Cheesecake Brownies

For the Brownie Layer:

1/2 cup (113g) unsalted butter

1 cup (200g) granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup (40g) unsweetened cocoa powder

1/2 cup (65g) all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

For the Cheesecake Layer:

8 oz (226g) cream cheese, softened

1/4 cup (50g) granulated sugar

1 large egg

1 teaspoon vanilla extract

Zest of 1 lemon (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving a little overhang for easy removal later.

    Prepare the Brownie Layer:

      - In a medium saucepan, melt the butter over low heat. Once melted, remove from the heat and stir in 1 cup of sugar until well combined.

        - Add the 2 eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

          - Sift in the cocoa powder and add the flour, salt, and baking powder. Stir until just combined — a few lumps are okay!

            Prepare the Cheesecake Layer:

              - In a mixing bowl, combine the softened cream cheese and 1/4 cup of sugar. Beat with an electric mixer until smooth and creamy.

                - Add in the egg, vanilla extract, and lemon zest (if using). Mix until combined and creamy.

                  Assemble the Brownies:

                    - Pour half of the brownie batter into the prepared pan. Spread it evenly.

                      - Spoon the cheesecake mixture over the brownie layer. Use a spatula to spread it gently and evenly.

                        - Top with the remaining brownie batter. Use a knife or a toothpick to create swirls between the brownie and cheesecake layers for a marbled effect.

                          Bake: Place in the preheated oven and bake for 30-35 minutes or until a toothpick inserted into the brownie portion comes out with moist crumbs (but not wet batter).
