Ingredients

For the Brownie Base:

1/2 cup (115g) unsalted butter

1 cup (200g) granulated sugar

2 large eggs

1 tsp vanilla extract

1/3 cup (40g) unsweetened cocoa powder

1/2 cup (65g) all-purpose flour

1/4 tsp salt

1/4 tsp baking powder

For the Cheesecake Layer:

8 oz (226g) cream cheese, softened

1/4 cup (50g) granulated sugar

1 large egg

1 tsp vanilla extract

Zest of 1 lemon (optional, for a citrusy kick)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8 inch (20x20 cm) baking pan and line it with parchment paper for easy removal.

    Make the Brownie Base:

      - In a medium saucepan, melt the butter over low heat. Once melted, remove from heat and stir in the sugar until well combined.

        - Beat in the eggs, one at a time, mixing well after each addition. Add the vanilla extract and stir until mixed.

          - In a separate bowl, whisk together cocoa powder, flour, salt, and baking powder. Gradually add this to the wet mixture, stirring until just combined.

            - Pour the brownie batter into the prepared baking pan, spreading it evenly.

              Prepare the Cheesecake Layer:

                - In a mixing bowl, beat the softened cream cheese with an electric mixer until creamy and smooth.

                  - Add the granulated sugar and beat until well incorporated. Then add the egg, vanilla extract, and lemon zest (if using) and mix until smooth.

                    Assemble the Brownies:

                      - Pour the cheesecake mixture over the brownie base. Using a knife or a toothpick, swirl the mixtures together gently, creating a marbled effect on the top.

Bake: Place the pan in the preheated oven and bake for 30-35 minutes, or until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).

Cool and Serve: Allow the brownies to cool in the pan for at least 20 minutes. Lift them out using the parchment paper and transfer them to a wire rack to cool completely. Once cooled, cut them into squares and serve!
