Ingredients

12 oz cheese tortellini (fresh or frozen)

1 lb thinly sliced steak (ribeye or flank steak works best)

1 cup bell peppers (red and green), sliced

1 cup onion, sliced

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 ½ cups shredded provolone cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Tortellini: In a large pot of salted boiling water, cook the tortellini according to package instructions until al dente, then drain and set aside.

Sauté the Vegetables: In a large skillet over medium heat, add olive oil. Once hot, add the sliced onions and bell peppers. Sauté for about 5 minutes, or until they start to soften. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

Cook the Steak: Push the veggies to the side of the pan. In the same skillet, add the thinly sliced steak. Season with salt, pepper, and Italian seasoning. Cook for about 4-5 minutes, stirring occasionally, until the steak is cooked to your desired doneness.

Combine Cream Mixture: Lower the heat and add the heavy cream to the skillet. Stir well to combine everything. Bring the mixture to a simmer, then slowly stir in the provolone cheese until melted and creamy.

Combine All Ingredients: Add the cooked tortellini to the skillet, tossing gently to coat in the creamy sauce. If the sauce is too thick, you can add a splash of pasta water to reach your desired consistency.

Serve: Remove from heat and garnish with fresh parsley. Serve hot and enjoy your creamy cheesesteak tortellini!
