Ingredients

1 lb ground beef

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon paprika

Salt and pepper to taste

1 cup cooked rice (white or brown)

1 can (15 oz) black beans, rinsed and drained

1 1/2 cups shredded cheddar cheese

6 large flour tortillas

1 cup salsa (mild or hot, as preferred)

1/2 cup sour cream

Fresh cilantro, chopped (for garnish)

Optional toppings: diced tomatoes, diced jalapeños, sliced avocado

Instructions

Cook the Beef:

Heat olive oil in a large skillet over medium heat. Add chopped onions and sauté until softened, about 3-4 minutes. Stir in garlic and cook for an additional 1 minute. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

      Season the Meat:

Once the beef is browned, drain any excess fat. Stir in cumin, chili powder, paprika, salt, and pepper. Mix well and cook for another 2 minutes until the spices are fragrant.

          Combine Ingredients:

Reduce heat to low and add the cooked rice and black beans to the beef mixture. Mix thoroughly, allowing the flavors to meld together for about 3 minutes. Remove from heat and stir in 1 cup of shredded cheddar cheese until melted.

              Assemble the Burritos:

Lay out the tortillas on a flat surface. Spoon equal portions of the beef mixture onto the center of each tortilla. Roll tightly, folding in the sides as you go to create a burrito. Place seam-side down on a baking dish.

                  Bake the Burritos:

Preheat your oven to 350°F (175°C). Once the burritos are assembled, sprinkle the remaining 1/2 cup of shredded cheddar cheese on top. Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, allowing the cheese to bubble and turn golden.

                      Serve:

Remove from the oven and let cool for a couple of minutes before serving. Drizzle with salsa and sour cream, and garnish with chopped cilantro. Add optional toppings like diced tomatoes, jalapeños, or avocado as desired.
