Ingredients
  

1 lb ground beef

1 cup uncooked long-grain rice

2 cups beef broth

1 can (15 oz) diced tomatoes, undrained

1 can (10.5 oz) cream of mushroom soup

1 onion, chopped

2 cloves garlic, minced

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 cup frozen mixed vegetables (peas, carrots, corn)

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onion is soft, about 5-7 minutes. Drain excess fat.

      Combine Ingredients: In a large mixing bowl, combine the cooked beef mixture with the uncooked rice, beef broth, diced tomatoes (with juice), cream of mushroom soup, garlic powder, onion powder, paprika, and frozen mixed vegetables. Stir well until all ingredients are combined. Season with salt and pepper to taste.

        Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish. Spread it out evenly.

          Bake: Cover the dish tightly with aluminum foil and bake in the preheated oven for 30 minutes.

            Add Cheese: After 30 minutes, remove the foil and sprinkle the shredded cheddar cheese on top. Return the casserole to the oven, uncovered, and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

              Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired, then serve warm.
