1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

4 cups frozen hash browns (or 2 lbs fresh potatoes, diced)

2 cups shredded cheddar cheese

1 cup sour cream

1 cup beef broth

2 cups mixed veggies (peas, carrots, corn)

1 teaspoon paprika

½ teaspoon onion powder

½ teaspoon garlic powder

Salt and pepper to taste

1 cup breadcrumbs (optional for topping)

2 tablespoons olive oil (for cooking beef)

Instructions
 

Preheat the oven to 350°F (175°C).

    Cook the beef: In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent. Add the ground beef and cook until browned, breaking it apart with a spatula. Season with salt, pepper, paprika, onion powder, and garlic powder. Drain excess fat if necessary.

      Mix ingredients: In a large bowl, combine the cooked beef mixture, frozen hash browns (or fresh diced potatoes), sour cream, beef broth, and mixed veggies. Stir until fully combined. Fold in 1.5 cups of shredded cheddar cheese, reserving the rest for topping.

        Transfer to casserole dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it out evenly.

          Add toppings: Sprinkle the remaining cheddar cheese over the top. If you like a crunchy topping, you can also add breadcrumbs on top of the cheese.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. Then remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

              Serve: Allow the casserole to cool for a few minutes before serving. Garnish with fresh herbs if desired.
