6 small corn or flour tortillas

4 large eggs

1 cup shredded cheddar cheese

1/2 cup diced Hatch green chiles (fresh or roasted)

1/4 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil or butter

1/4 cup chopped fresh cilantro (optional)

Salsa or hot sauce, for serving

Instructions
 

Whisk the Eggs: In a mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until fully combined and slightly frothy.

    Cook the Eggs: Heat olive oil or butter in a non-stick skillet over medium heat. Pour the egg mixture into the skillet and gently scramble the eggs, cooking for about 4-5 minutes until they're softly set and still a bit creamy. Stir in the diced Hatch green chiles and half of the shredded cheddar cheese until combined and the cheese melts. Remove from heat.

      Prepare the Tortillas: While the eggs are cooking, heat the tortillas in a separate pan over medium heat for about 30 seconds on each side, or until they're warmed and pliable. You can also wrap them in foil and warm them in the oven at 350°F for about 10 minutes.
