1 lb ground beef or turkey

1 cup breadcrumbs (plain or seasoned)

1/2 cup grated Parmesan cheese

1 cup shredded cheddar cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 large egg, beaten

1/4 cup milk

1/4 cup ketchup (plus extra for topping)

2 tablespoons Worcestershire sauce

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup frozen mixed vegetables (peas, carrots, corn)

1/2 cup additional shredded cheese for topping

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare the Meat Mixture: In a large mixing bowl, combine the ground beef (or turkey), breadcrumbs, Parmesan cheese, half of the shredded cheddar cheese, onion, garlic, beaten egg, milk, ketchup, Worcestershire sauce, oregano, smoked paprika, salt, and pepper. Mix until all ingredients are thoroughly combined.

      Layer the Casserole: Spread half of the meat mixture in the bottom of a greased 9x13 inch baking dish. Even it out with a spatula.

        Add Vegetables: Layer the frozen mixed vegetables evenly on top of the meat mixture.

          Top with Remaining Meat: Spoon the remaining meat mixture over the vegetables and shape it into an even layer.

            Add Topping: Drizzle extra ketchup over the entire casserole. Then sprinkle the remaining shredded cheddar cheese and any additional cheese you like on top.

              Bake: Cover the dish with aluminum foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the meat is cooked through and the cheese is bubbly and golden brown.

                Serve: Let the casserole cool for a few minutes before slicing and serving. Enjoy your cheesy, loaded meatloaf casserole with a side of mashed potatoes or a fresh salad!
