1 lb ground beef (or ground turkey)

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1 cup shredded cheddar cheese (plus extra for topping)

1 large egg

1 small onion, finely chopped

2 cloves garlic, minced

1 cup carrots, diced

1 cup zucchini, diced

1 cup bell pepper (any color), diced

1 cup corn (canned or frozen)

1/2 cup milk

1 tbsp Worcestershire sauce

2 tbsp ketchup (plus more for drizzling on top)

1 tsp dried Italian herbs (oregano, thyme, basil)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 350°F (175°C) and grease a 9x13-inch casserole dish.

    In a large mixing bowl, combine the ground beef, breadcrumbs, 1/2 cup Parmesan cheese, 1 cup shredded cheddar cheese, egg, onion, garlic, carrots, zucchini, bell pepper, corn, milk, Worcestershire sauce, ketchup, and Italian herbs. Season with salt and pepper to taste.

      Mix thoroughly until all ingredients are evenly incorporated.

        Transfer the meat mixture into the greased casserole dish, spreading it evenly.

          Top the mixture with additional shredded cheddar cheese, ensuring an even layer.

            Drizzle a little ketchup over the top for added flavor and moisture.

              Cover the casserole with aluminum foil and bake in the preheated oven for 45 minutes.

                Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden, and the meatloaf is cooked through (internal temperature should reach 160°F/70°C).

                  Once done, remove from the oven and let it cool slightly before slicing.

                    Garnish with fresh parsley before serving.
