2 cups leftover mashed potatoes

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

2 large eggs

1/4 cup whole milk

1/4 cup sour cream

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

1/4 cup chopped green onions (optional)

Non-stick cooking spray or muffin liners

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with non-stick cooking spray or line with muffin liners.

    Mix Ingredients: In a large mixing bowl, combine the leftover mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, eggs, whole milk, sour cream, garlic powder, onion powder, salt, and pepper. Stir until all ingredients are well combined. If you're using green onions, fold them in at this stage.

      Fill Muffin Tin: Spoon the cheesy mashed potato mixture evenly into the prepared muffin tin, filling each cup about 3/4 full. Use a spatula to smooth the tops if desired.

        Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
