Ingredients
  

1 lb ground beef

1 cup breadcrumbs

1/2 cup shredded provolone cheese

1/2 cup shredded mozzarella cheese

1 medium onion, finely chopped

1 cup bell peppers (mix of red and green), finely chopped

2 cloves garlic, minced

2 large eggs

1/4 cup milk

2 tablespoons Worcestershire sauce

1 tablespoon Italian seasoning

Salt and pepper to taste

1 cup beef broth (for glazing)

Additional provolone cheese slices (for topping)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Sauté Vegetables: In a skillet over medium heat, add a splash of oil and sauté the chopped onions and bell peppers until they are soft, about 5-7 minutes. Add in the minced garlic and sauté for another minute. Remove from heat and allow to cool slightly.

      Mix Ingredients: In a large mixing bowl, combine the ground beef, breadcrumbs, shredded provolone and mozzarella cheeses, sautéed vegetables, eggs, milk, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix until everything is well combined—use your hands for the best results.

        Shape the Meatloaf: Transfer the mixture to a loaf pan or shape it into a loaf on a lined baking sheet. Make sure to mold it tightly to maintain its shape while baking.

          Glaze and Bake: Pour the beef broth over the meatloaf for added moisture and flavor. Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 160°F (70°C).

            Add Cheese Topping: In the last 10 minutes of baking, lay additional slices of provolone cheese over the top of the meatloaf and return it to the oven until the cheese is nicely melted and bubbly.

              Let Rest: Once done, remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps retain juices.

                Serve: Slice the meatloaf and serve warm, ideally with a side of mashed potatoes or a fresh salad.
