Cheesy Scalloped Potatoes

4 large Russet potatoes, thinly sliced

2 cups sharp cheddar cheese, grated

1 cup group Parmesan cheese, grated

1 medium onion, finely chopped

2 cloves garlic, minced

2 cups heavy cream

1 cup whole milk

3 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika (optional)

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter.

    In a saucepan over medium heat, melt 3 tablespoons of butter. Add the chopped onion and sauté until translucent, about 5 minutes.

      Stir in the minced garlic and cook for an additional minute. Sprinkle the flour over the onions and garlic, mixing well to form a roux.

        Gradually pour in the heavy cream and milk, whisking continuously to avoid lumps. Simmer on low heat for about 5 minutes until the sauce thickens slightly.

          Season the mixture with salt, black pepper, and paprika (if using). Remove from heat and stir in half of the cheddar cheese and all of the Parmesan cheese until melted and combined.

            In the prepared baking dish, layer half of the sliced potatoes evenly. Pour half of the creamy cheese sauce over the first layer of potatoes.

              Add the remaining potato slices in a second layer and pour the remaining cheese sauce over it, ensuring all potatoes are well-coated.

                Top with the remaining sharp cheddar cheese.

                  Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.

                    Remove the foil and bake for an additional 15-20 minutes, until the top is golden and bubbly.

                      Let the dish sit for about 10 minutes before serving. Garnish with fresh chives or parsley for an added pop of color and flavor.
