12 ounces penne pasta

1 tablespoon olive oil

4 cloves garlic, minced

1 (14-ounce) can artichoke hearts, drained and chopped

5 ounces fresh spinach (or 10 ounces frozen spinach, thawed and drained)

1 cup cream cheese, softened

1 cup sour cream

1 cup mayonnaise

1 cup grated Parmesan cheese

2 cups shredded mozzarella cheese, divided

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

1/2 teaspoon red pepper flakes (optional)

Freshly chopped parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and set aside.

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the chopped artichoke hearts and spinach, cooking until the spinach has wilted (if using fresh) or heated through (if using frozen), about 3-4 minutes.

        Make the Cheese Mixture: In a large bowl, combine softened cream cheese, sour cream, and mayonnaise. Mix until smooth. Stir in the Parmesan cheese, 1 cup of shredded mozzarella cheese, dried basil, dried oregano, salt, pepper, and optional red pepper flakes.
