Cooking meatballs to perfection is crucial for achieving a delicious Cheesy Stuffed Meatball Sub. To check for doneness, utilize a meat thermometer; ground beef should reach an internal temperature of 160°F (71°C). If you don’t have a thermometer on hand, you can also cut one meatball in half to ensure it’s no longer pink and juices run clear.

Ingredients

1 pound ground beef (or a mix of beef and pork)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup finely chopped fresh parsley

2 cloves garlic, minced

1 large egg

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup mozzarella cheese, cut into small cubes

2 cups marinara sauce (store-bought or homemade)

4 hoagie rolls

1/2 cup shredded mozzarella cheese (for topping)

Olive oil, for brushing

Fresh basil leaves, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, egg, Italian seasoning, salt, and pepper. Mix until well-combined but don't over-knead.

Make the Cheese Filling: Take a small portion of the meat mixture (about 1 tablespoon) and flatten it in your palm. Place a cube of mozzarella cheese in the center and wrap the meat around it, rolling it into a ball. Repeat this until all the cheese cubes and meat mixture are used, creating about 12-16 stuffed meatballs.

Bake the Meatballs: Arrange the meatballs on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20 minutes until browned and cooked through.

Heat the Marinara Sauce: While the meatballs are baking, heat the marinara sauce in a saucepan over medium-low heat until simmering.

Prepare the Hoagie Rolls: Cut the hoagie rolls lengthwise, being careful not to cut all the way through. Lightly brush the insides with olive oil.

Assemble the Subs: Once the meatballs are done, place 3-4 meatballs in each hoagie roll. Spoon marinara sauce over the meatballs and sprinkle shredded mozzarella cheese on top.

Broil the Subs: Place the assembled subs under the broiler for 3-5 minutes, or until the cheese is melted and bubbly. Keep a close eye to avoid burning.

Garnish and Serve: Remove from the oven, garnish with fresh basil leaves (if desired), and serve hot with additional marinara sauce on the side for dipping.
