Ingredients
  

1 can (21 oz) cherry pie filling

1 package of refrigerated pie crusts (2 crusts)

1 cup of cream cheese, softened

1/4 cup of powdered sugar

1 teaspoon vanilla extract

1 egg (for egg wash)

1 tablespoon milk (for egg wash)

1 tablespoon granulated sugar (for sprinkling)

Optional: whipped cream or vanilla ice cream for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Pie Crusts: Roll out the refrigerated pie crusts on a lightly floured surface. Use a round cookie cutter or a glass to cut out circles, about 4 inches in diameter. You should get about 12 circles from both crusts combined.

      Make the Cream Cheese Mixture: In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy. Set aside.

        Fill the Circles: Take each pie crust circle and place a dollop (about 1 tablespoon) of the cream cheese mixture in the center. Then, add a tablespoon of cherry pie filling on top of the cream cheese.

          Seal the Bombs: Carefully fold the edges of the pie crust over the filling to form a pocket. Pinch the edges to seal securely, ensuring no filling can escape during baking. Repeat with all crust circles.

            Prepare for Baking: In a small bowl, whisk together the egg and milk to make an egg wash. Brush the tops of the filled pie bombs with the egg wash. Sprinkle granulated sugar on top for a sweet finish.

              Bake: Place the pie bombs on the prepared baking sheet and bake in the preheated oven for 18-20 minutes, or until golden brown.

                Cool and Serve: Let the cherry pie bombs cool slightly before serving. Enjoy them warm, optionally with a side of whipped cream or a scoop of vanilla ice cream!
