Ingredients
  

1 lb chicken breast, diced

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

1 package (9 oz) cheese tortellini (fresh or frozen)

1 teaspoon Italian seasoning

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper (or to taste)

1 cup grated Parmesan cheese

1 cup spinach (fresh or frozen)

Chopped fresh parsley (for garnish)

Instructions
 

Heat the olive oil in a large pot over medium heat. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside.

    In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent, about 4 minutes.

      Pour in the chicken broth and bring to a simmer. Add the heavy cream and stir well.

        Add the tortellini to the pot and cook according to the package instructions, usually about 3-5 minutes until they float to the top.

          Return the cooked chicken to the soup. Stir in the Italian seasoning, salt, and black pepper.

            Once the tortellini is cooked, reduce heat to low and add in the grated Parmesan cheese, stirring until melted and well combined.

              Finally, add the spinach and cook for another minute, until just wilted.

                Taste and adjust seasoning if necessary. Serve hot, garnished with chopped fresh parsley.
