2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 pound rotisserie chicken, shredded

6 cups chicken broth

2 cups heavy cream

10 ounces cheese tortellini, fresh or frozen

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper, to taste

2 cups fresh spinach

Chopped parsley for garnish

Instructions
 

Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are tender.

    Add Chicken and Broth: Stir in the shredded rotisserie chicken, followed by the chicken broth. Bring the mixture to a simmer.

      Incorporate Cream and Tortellini: Lower the heat and add the heavy cream and cheese tortellini to the pot. Cook according to the tortellini package instructions, usually about 5-7 minutes.

        Season the Soup: Once the tortellini is cooked, stir in the grated Parmesan cheese and Italian seasoning. Season with salt and black pepper to taste.

          Finish with Spinach: Gently fold in the fresh spinach and cook for an additional 2-3 minutes until the spinach has wilted.
