2 chicken breasts, boneless and skinless, cut into bite-sized pieces

2 cups fresh broccoli florets

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 teaspoon Dijon mustard

1 teaspoon dried thyme

½ teaspoon paprika

Salt and pepper, to taste

½ cup grated Parmesan cheese

Fresh parsley, chopped, for garnish (optional)

Prepare the Chicken: Season the chicken pieces with salt, pepper, and paprika. Set aside.

    Blanch the Broccoli: In a pot of boiling water, add the broccoli florets and blanch for about 2-3 minutes until they are bright green and tender-crisp. Drain and set aside.
