Ingredients

1 lb (450g) cooked chicken, shredded or diced

1 (30 oz) bag of frozen hashbrowns

1 cup shredded cheddar cheese

1 cup sour cream

1 can (10.5 oz) cream of chicken soup

1 cup (240ml) chicken broth

1 medium onion, finely chopped

2 cloves garlic, minced

1 tsp paprika

1/2 tsp black pepper

1/2 tsp salt (or to taste)

1/4 cup green onions, sliced (for garnish)

1 cup cornflakes or crushed potato chips (for topping, optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Base Mix: In a large mixing bowl, combine the shredded chicken, hashbrowns, cheddar cheese, sour cream, cream of chicken soup, chicken broth, chopped onion, garlic, paprika, black pepper, and salt. Mix thoroughly until everything is evenly coated and well combined.

Transfer to Baking Dish: Grease a 9x13 inch (or similar-sized) baking dish with a little cooking spray or butter. Pour the mixture into the prepared baking dish, spreading it out evenly.

Add Topping: If you'd like some extra crunch, sprinkle the cornflakes or crushed potato chips evenly over the top of the casserole.

Bake: Place the casserole in the preheated oven and bake for 45-50 minutes, or until the edges are bubbly and the top is golden brown.

Garnish and Serve: Once done, remove the casserole from the oven and let it cool for about 5-10 minutes. Garnish with sliced green onions before serving.

Enjoy: Slice into squares and serve warm. This dish makes a great breakfast, lunch, or dinner option!
