Chicken Mushroom Stroganoff

Ingredients
  

1 lb (450g) boneless, skinless chicken breasts, sliced into strips

2 cups (150g) fresh mushrooms, sliced (such as cremini or button)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup (240ml) chicken broth

1 cup (240ml) sour cream

2 tablespoons Worcestershire sauce

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon smoked paprika

Salt and pepper to taste

8 oz (225g) egg noodles or your pasta of choice

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Noodles: Bring a pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the chicken strips with salt and pepper. Add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil and the butter. Add the chopped onions and cook for about 2-3 minutes until translucent. Add the minced garlic and sliced mushrooms, cooking until the mushrooms have released their moisture and are tender, about 5 minutes.

        Make the Sauce: Pour in the chicken broth and stir in the Worcestershire sauce and smoked paprika. Let it simmer for about 3-4 minutes to reduce slightly.

          Combine Everything: Lower the heat and stir in the sour cream until well combined and creamy. Return the cooked chicken to the skillet and stir until well-coated and heated through. Adjust seasoning with salt and pepper as needed.

            Serve: Toss the cooked noodles in the sauce or serve the stroganoff over the noodles on plates. Garnish with fresh parsley before serving.
