2 boneless, skinless chicken breasts

1 cup marinara sauce

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

4 large flour tortillas

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, or a blend)

Salt and pepper to taste

Fresh basil leaves (for garnish)

Optional: crushed red pepper flakes (for some heat)

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt, pepper, and dried Italian herbs. Heat olive oil in a skillet over medium heat and add minced garlic. Sauté for about 1 minute until fragrant.

    Cook the Chicken: Add the seasoned chicken breasts to the skillet and cook for about 5-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F). Remove from heat, let cool slightly, then shred the chicken with two forks.

      Assemble the Quesadilla: Lay one tortilla in the skillet over low heat. Spread about 1/4 cup of marinara sauce evenly over the tortilla. Sprinkle 1/2 cup of mozzarella cheese and 1/4 cup of Parmesan cheese on top, then layer shredded chicken evenly over the cheese. Drizzle another tablespoon of marinara sauce over the chicken, then add another 1/2 cup of mozzarella cheese on top. Place a second tortilla on top.

        Cook the Quesadilla: Cook for about 3-5 minutes until the bottom tortilla is golden brown and the cheese is melted. Carefully flip the quesadilla using a large spatula and cook for an additional 3-5 minutes on the other side, until golden brown.

          Slice and Serve: Once cooked, remove the quesadilla from the skillet and let it rest for a minute. Cut it into wedges with a sharp knife. Garnish with fresh basil leaves and a sprinkle of crushed red pepper flakes, if desired. Serve with extra marinara sauce on the side for dipping.
