Ingredients

3 cups cooked rotini pasta

2 cups cooked, shredded chicken (about 2 chicken breasts)

2 cups marinara sauce

1 teaspoon Italian seasoning

1 teaspoon garlic powder

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

1 cup ricotta cheese

1/2 cup breadcrumbs (preferably Italian-style)

2 tablespoons fresh basil, chopped (for garnish)

Salt and pepper to taste

Olive oil, for drizzling

Instructions

Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with a bit of olive oil.

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook until al dente according to package instructions. Drain and set aside.

Mix the Chicken: In a large bowl, combine the shredded chicken, marinara sauce, Italian seasoning, garlic powder, and season with salt and pepper to taste. Stir to coat the chicken evenly in the sauce.

Combine Ingredients: In a separate large bowl, mix the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese together until well combined.

          Layer the Casserole:

            - Start by spreading half of the cooked rotini evenly in the bottom of the greased baking dish.

              - Next, layer half of the chicken mixture over the pasta.

                - Spread the ricotta cheese mixture on top of the chicken layer.

                  - Add the remaining rotini and finish by layering the remaining chicken mixture on top.

Cheesy Finish: Sprinkle the remaining mozzarella and Parmesan cheeses over the top layer. Finally, sprinkle the breadcrumbs evenly across the cheese layer.

Bake: Drizzle a little olive oil over the top of the casserole to help the breadcrumbs crisp up. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

Serve: Once done, remove from the oven and let it sit for about 5 minutes. Garnish with fresh basil before serving.
