Chicken Tacos with Strawberry Slaw

For the Chicken:

1 pound boneless, skinless chicken thighs

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 tablespoon lime juice

Salt and pepper, to taste

For the Strawberry Slaw:

2 cups shredded green cabbage

1 cup sliced strawberries (fresh or frozen, thawed)

1/4 cup diced red onion

1/4 cup chopped cilantro

1 tablespoon honey

2 tablespoons apple cider vinegar

Salt and pepper, to taste

For Serving:

8 small corn or flour tortillas

Extra lime wedges for garnish

Avocado slices (optional)

Instructions
 

Prepare the Chicken:

    In a bowl, combine olive oil, chili powder, cumin, garlic powder, lime juice, salt, and pepper. Add the chicken thighs and toss until they're well coated with the marinade. Cover and let sit in the fridge for at least 30 minutes (or up to 4 hours for more flavor).

      Cook the Chicken:

        Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade, and grill or cook in the skillet for about 5-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Remove from heat and let rest for a few minutes before slicing it into strips.

          Make the Strawberry Slaw:

            In a large bowl, combine the shredded cabbage, sliced strawberries, diced red onion, and chopped cilantro. In a small bowl, whisk together honey, apple cider vinegar, salt, and pepper. Pour the mixture over the slaw and toss until everything is evenly coated. Adjust seasoning as necessary.

              Warm the Tortillas:

                In a dry skillet, warm the tortillas over medium heat for about 20-30 seconds on each side, or until they are pliable and slightly charred.

                  Assemble the Tacos:
