Ingredients

1 sheet of puff pastry (thawed if frozen)

1 cup sharp cheddar cheese, grated

1/2 cup cooked chili (beef, turkey, or vegetarian)

1/4 cup cream cheese, softened

1 egg (for egg wash)

1 tablespoon fresh chives, chopped (optional)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Flour, for dusting

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet to smooth out any creases and increase its size slightly. Cut the sheet into 2-inch squares.

Make the Filling: In a mixing bowl, combine the cooked chili, cream cheese, garlic powder, onion powder, and a pinch of salt and pepper. Stir until well mixed. Fold in the grated cheddar cheese and chives if using.

Fill the Pastry: Place about a teaspoon of the chili-cheddar mixture in the center of each puff pastry square. Be careful not to overfill!

Seal the Bites: Fold the corners of each pastry square over the filling to form a pocket. Press to seal the edges tightly, and use a fork to crimp the edges for an extra secure seal.

Prepare for Baking: Whisk the egg in a small bowl to create an egg wash. Brush the tops of each filled pastry with the egg wash to give them a golden color while baking.

Bake: Carefully transfer the pastry bites to the prepared baking sheet and bake in preheated oven for 15-20 minutes or until they are golden brown and puffed.

Serve: Remove from oven and let them cool for a few minutes before serving. These bites are best enjoyed warm, and can be served with hot sauce or sour cream on the side for dipping.
