1 lb elbow macaroni

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

1 lb ground beef (or turkey)

1 (15 oz) can kidney beans, drained and rinsed

1 (15 oz) can black beans, drained and rinsed

1 (28 oz) can crushed tomatoes

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup milk

½ cup sour cream

Chopped green onions (for garnish)

Fresh cilantro (for garnish)

Instructions
 

Cook the Macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package directions until al dente. Drain and set aside.

    Sauté Aromatics: In a large, deep skillet or pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for an additional minute.

      Brown the Meat: Add the ground beef (or turkey) to the skillet. Season with salt and pepper. Cook, breaking it apart with a spatula, until browned and cooked through, about 6-8 minutes.

        Build the Chili Mixture: Stir in the kidney beans, black beans, and crushed tomatoes. Add the chili powder, cumin, and smoked paprika. Mix well to combine and let simmer for about 10 minutes, allowing the flavors to meld.

          Make it Cheesy: Reduce the heat to low. Stir in the cooked macaroni, milk, and sour cream until well combined. Gradually fold in the cheddar and Monterey Jack cheese, stirring until melted and gooey.

            Final Touches: Taste and adjust seasoning with salt and pepper as needed. Remove from heat.
