1 lb boneless, skinless chicken thighs (cut into bite-sized pieces)

1/2 cup all-purpose flour

1/2 cup cornstarch

2 large eggs (beaten)

1/2 cup sesame oil (divided)

1/4 cup soy sauce

1/4 cup honey

2 tablespoons rice vinegar

1 tablespoon garlic (minced)

1 tablespoon ginger (freshly grated)

1 tablespoon sesame seeds (toasted)

3 green onions (sliced)

Salt and pepper (to taste)

Cooked sesame or jasmine rice (for serving)

Instructions
 

Prepare the Chicken: In a mixing bowl, season the chicken pieces with salt and pepper. Set aside.

    Breading Station: In a shallow dish, mix flour and cornstarch. In another dish, beat the eggs. Dredge each piece of chicken in the flour mixture, then dip into the beaten eggs, and coat again in the flour mixture for extra crunch.

      Fry the Chicken: In a large skillet or wok, heat 1/4 cup of sesame oil over medium-high heat. Carefully add the breaded chicken in batches, without overcrowding the pan. Fry until golden brown and crispy, about 4-5 minutes per side. Remove and place on a paper towel-lined plate to drain excess oil.

        Prepare the Sauce: In a separate bowl, whisk together the remaining 1/4 cup of sesame oil, soy sauce, honey, rice vinegar, minced garlic, and grated ginger.

          Combine Chicken with Sauce: Once all chicken is fried, pour the sauce over the crispy chicken in the skillet, tossing to coat evenly. Cook for an additional 2-3 minutes until the sauce thickens slightly.

            Garnish and Serve: Sprinkle toasted sesame seeds and sliced green onions over the chicken. Serve hot over a bed of cooked sesame or jasmine rice.
