1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1/4 cup cornstarch

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (optional, for heat)

1/2 cup vegetable oil (for frying)

1/4 cup honey

1/4 cup soy sauce

2 tablespoons rice vinegar

1 tablespoon toasted sesame oil

1 tablespoon fresh ginger, minced

2 cloves garlic, minced

2 tablespoons sesame seeds

2 green onions, sliced (for garnish)

Instructions
 

Prepare the Chicken: In a medium bowl, combine the flour, cornstarch, salt, pepper, garlic powder, and cayenne pepper. In another bowl, mix the beaten eggs. In a third bowl, add the panko breadcrumbs for coating.

    Coat the Chicken: Dip each piece of chicken into the flour mixture, then into the egg, and finally coat it with panko breadcrumbs. Set aside on a plate.

      Fry the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Fry the chicken pieces in batches until golden brown and crispy, about 4-5 minutes per side. Transfer the cooked chicken to a paper towel-lined plate to drain excess oil.

        Make the Sauce: In a separate saucepan, combine honey, soy sauce, rice vinegar, sesame oil, ginger, and minced garlic. Bring to a simmer over medium heat, stirring frequently, until the sauce thickens slightly, about 3-5 minutes.

          Toss Chicken in Sauce: Once the sauce is ready, add the fried chicken pieces to the pan and gently toss to coat all the chicken in the sauce. Allow to cook together for an additional 2 minutes.

            Garnish and Serve: Sprinkle sesame seeds and sliced green onions over the top. Serve immediately over steamed rice or with your choice of sides.
