1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup dark chocolate chips

1 cup dried cherries, chopped

1/2 cup chopped walnuts (optional)

1/4 teaspoon almond extract (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.

    Cream the Butter and Sugars: In a large mixing bowl, use a hand mixer or stand mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).

      Add Eggs and Extracts: Beat in the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and almond extract (if using), and mix until combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined.

          Fold in Mix-ins: Gently fold in the dark chocolate chips, chopped dried cherries, and walnuts (if using) until evenly distributed throughout the dough.

            Scoop the Cookies: Using a tablespoon or cookie scoop, drop rounded dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
