Ingredients

2 ripe bananas, mashed

1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup brown sugar

1/2 cup granulated sugar

1/2 cup unsweetened cocoa powder

1/2 cup chocolate chips (dark or semi-sweet)

1/2 cup milk (or almond milk)

1/4 cup vegetable oil

2 large eggs

1 tsp vanilla extract

1 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

1/2 tsp cinnamon (optional)

Instructions

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

In a large mixing bowl, combine the mashed bananas, milk, vegetable oil, eggs, and vanilla extract. Stir until well combined.

In another bowl, whisk together the flour, rolled oats, brown sugar, granulated sugar, cocoa powder, baking soda, baking powder, salt, and cinnamon (if using).

Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix!

Fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.

Fill each muffin cup about 2/3 full with the batter.

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let the muffins cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.

Enjoy warm or store in an airtight container for up to 3 days!
