Ingredients
  

1 cup all-purpose flour

2 tbsp sugar (feel free to adjust)

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 medium ripe banana, mashed

1 cup buttermilk (or milk with 1 tbsp vinegar)

1 large egg

2 tbsp melted butter (plus more for cooking)

1 tsp vanilla extract

1/2 cup semi-sweet chocolate chips

Optional: Sliced bananas and additional chocolate chips for topping

Instructions
 

In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

    In a separate bowl, mix the mashed banana, buttermilk, egg, melted butter, and vanilla extract until smooth.

      Pour the banana mixture into the dry ingredients, stirring gently just until combined. Be careful not to overmix; it’s okay if there are a few lumps.

        Fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.

          Heat a non-stick skillet or griddle over medium heat and add a small amount of butter.

            Once the butter is melted and bubbly, pour about 1/4 cup of batter for each pancake onto the skillet.

              Cook the pancakes for 2-3 minutes, or until small bubbles form on the surface. Flip and cook for another 1-2 minutes until golden brown.

                Repeat with the remaining batter, adding more butter to the skillet as needed.

                  Serve warm with sliced bananas, additional chocolate chips, and syrup if desired.
