For the Cookie Layer:

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

For the Cheesecake Layer:

16 oz cream cheese, softened

1/2 cup granulated sugar

1/4 cup sour cream

2 large eggs

1 teaspoon vanilla extract

1 tablespoon all-purpose flour

Preheat your oven: Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper, leaving some overhang for easy removal later.

    Prepare the cookie layer: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.

      Mix in the dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.

        Spread the cookie dough: Press about two-thirds of the cookie dough into the bottom of the prepared baking dish, creating an even layer.

          Make the cheesecake filling: In another bowl, beat the softened cream cheese until smooth. Add the granulated sugar, sour cream, eggs, vanilla extract, flour, and a pinch of salt. Mix until fully combined and creamy, avoiding overmixing.

            Layer the cheesecake filling: Carefully spread the cheesecake mixture over the cookie layer in the baking dish.

              Top with remaining cookie dough: Crumble the remaining cookie dough over the cheesecake layer. It doesn't need to cover completely; some of the cheesecake mixture can show through.

                Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the edges are set and the center has a slight jiggle.

                  Cool and chill: Allow the bars to cool in the baking dish for at least 1 hour at room temperature, then refrigerate for at least 2 hours before cutting into squares.
