For the Cookie Layer:

1 cup unsalted butter, softened

1 cup brown sugar, packed

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 ¼ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 cup semi-sweet chocolate chips

For the Cheesecake Layer:

16 oz cream cheese, softened

½ cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

½ cup sour cream

½ cup mini chocolate chips (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a 9x13 inch baking dish with parchment paper, leaving some overhang for easy removal.

    Make the Cookie Dough:

      - In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy.

        - Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

          - In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing just until combined.

            - Gently fold in the semi-sweet chocolate chips.

              Prepare the Cheesecake Layer:

                - In another mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and continue to beat until well combined.

                  - Mix in the vanilla extract and then add the eggs one at a time, mixing just until incorporated. Do not overmix.

                    - Stir in the sour cream until smooth. If desired, fold in the mini chocolate chips.

                      Assemble the Bars:

                        - Spread about two-thirds of the cookie dough into the prepared baking dish, pressing it evenly into the bottom.

                          - Pour the cheesecake mixture over the cookie layer and spread it evenly.

                            - Drop spoonfuls of the remaining cookie dough over the cheesecake layer, using a spatula to gently spread it out, though it’s okay if some cheesecake mixture peeks through.

                              Bake the Bars:

                                - Bake in the preheated oven for 40-45 minutes, or until the cheesecake is set and the cookie is golden brown. A toothpick inserted into the cheesecake layer should come out mostly clean.

                                  - Remove from the oven and let cool at room temperature for about 1 hour, then refrigerate for at least 3 hours, or overnight for the best results.

                                    Serve:

                                      - Once fully chilled, use the overhanging parchment paper to lift the cheesecake bars out of the pan. Cut into squares and serve. Enjoy the delightful layers of cookie and cheesecake!
