For the Cookie Dough Layer:

1 cup unsalted butter, softened

3/4 cup brown sugar, packed

1/2 cup granulated sugar

2 tsp vanilla extract

2 cups all-purpose flour

1/2 tsp salt

1 cup chocolate chips

For the Cheesecake Layer:

16 oz cream cheese, softened

1/2 cup granulated sugar

1 tsp vanilla extract

2 large eggs

For Topping:

Extra chocolate chips (optional)

Whipped cream (optional)

Instructions
 

Prepare the Cookie Dough: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Stir in the vanilla extract.

    Gradually add the flour and salt, mixing until combined. Fold in the chocolate chips. Set aside.

      Prepare the Cheesecake Layer: In another bowl, beat the softened cream cheese with granulated sugar until smooth. Add the vanilla extract and mix well.

        Add the eggs, one at a time, mixing just until combined after each addition. Do not overmix.

          Assemble the Bars: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

            Press half of the cookie dough mixture evenly into the bottom of the prepared baking pan.

              Pour the cheesecake mixture over the cookie layer, spreading it evenly.

                Crumble the remaining cookie dough on top of the cheesecake layer. Add extra chocolate chips if desired.

                  Bake for 30-35 minutes, or until the cheesecake is set and the cookie dough top is lightly golden.

                    Cool and Serve: Allow the bars to cool in the pan for at least 1 hour at room temperature, then refrigerate for at least 2-3 hours before slicing into squares. Serve with whipped cream if desired.
