Ingredients

2 cups chocolate chip cookie crumbs (about 20-25 cookies)

1/2 cup unsalted butter, melted

4 cups vanilla ice cream (softened)

1 cup semi-sweet chocolate chips

1/2 cup chopped nuts (optional)

1/4 cup caramel sauce (optional)

Whipped cream, for topping

Extra chocolate chips for garnish

Instructions

Prepare the Crust: In a mixing bowl, combine the chocolate chip cookie crumbs and melted butter. Mix until well combined and the mixture resembles wet sand. Press this mixture firmly into the bottom and up the sides of a 9-inch pie dish to form the crust. Chill in the fridge for 30 minutes to set.

Add the Ice Cream Layer: Once the crust is set, remove it from the refrigerator. In a large mixing bowl, stir the softened vanilla ice cream until it becomes smooth. If using, fold in the semi-sweet chocolate chips and chopped nuts gently.

Spread the Ice Cream: Pour the ice cream mixture into the prepared cookie crust. Use a spatula to smooth out the top. If desired, drizzle caramel sauce over the top of the ice cream before freezing.

Freeze: Cover the pie with plastic wrap or aluminum foil and place it in the freezer for at least 4 hours or until firm.

Serve: Once the pie is fully frozen, remove it from the freezer. Let it sit at room temperature for about 5-10 minutes to soften slightly. Top with whipped cream and extra chocolate chips before slicing and serving.

Enjoy: Slice the pie into wedges and serve immediately. Enjoy your rich, creamy, and crunchy dessert!
