Ingredients

3 ripe bananas, mashed

1/2 cup unsalted butter, melted

1/2 cup brown sugar, packed

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon espresso powder (or 1 tablespoon brewed espresso)

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup cocoa powder

1/2 cup chocolate chips (semi-sweet or dark)

1/2 cup chopped walnuts or pecans (optional)

Instructions

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.

In a large mixing bowl, combine the mashed bananas and melted butter, stirring until smooth.

Add the brown sugar and granulated sugar to the banana mixture, mixing well.

Beat in the eggs one at a time, then add in the vanilla extract and espresso powder until fully incorporated.

In another bowl, whisk together the flour, baking soda, salt, and cocoa powder.

Gradually add the dry ingredients to the wet mixture, stirring gently until just combined (be careful not to overmix).

Fold in the chocolate chips and nuts (if using).

Pour the batter into the prepared loaf pan and smooth the top.

Bake in the preheated oven for 55-65 minutes or until a toothpick inserted in the center comes out clean.

Once baked, remove from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
