For the Crust:

1 ½ cups chocolate graham cracker crumbs

½ cup unsalted butter, melted

2 tbsp granulated sugar

For the Cheesecake Filling:

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

½ cup sour cream

¼ cup cocoa powder

3 large eggs

1 tsp vanilla extract

6 oz semi-sweet chocolate, melted and slightly cooled

For the Fudge Topping:

1 cup semi-sweet chocolate chips

½ cup heavy cream

2 tbsp unsalted butter

1 cup mini chocolate truffles (optional, for garnish)

Instructions
 

Prepare the Crust:

    - Preheat the oven to 325°F (160°C).

      - In a bowl, mix together chocolate graham cracker crumbs, melted butter, and sugar until combined.

        - Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove and let it cool.

          Make the Filling:

            - In a large mixing bowl, beat the softened cream cheese with sugar on medium speed until smooth and creamy.

              - Add sour cream, cocoa powder, melted chocolate, and vanilla extract. Mix until fully incorporated.

                - Add eggs, one at a time, mixing on low speed just until combined. Avoid overmixing to keep the cheesecake light and fluffy. Pour the filling into the cooled crust.

                  Bake the Cheesecake:

                    - Bake for 50-60 minutes, or until the edges are set but the center is slightly jiggly.

                      - Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour (this helps prevent cracks).

                        - After an hour, transfer the cheesecake to the refrigerator and chill for at least 4 hours or overnight.

                          Prepare the Fudge Topping:

                            - In a small saucepan, heat the heavy cream until it just begins to simmer.
