3 large ripe bananas, mashed

1/2 cup tahini (sesame seed paste)

1/2 cup maple syrup or honey

1/4 cup coconut oil, melted

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 1/2 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1 cup dark chocolate chips (or vegan chocolate chips, if desired)

1/2 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C) and greasing a 9x5-inch loaf pan or lining it with parchment paper.

    Mash the Bananas: In a large mixing bowl, mash the ripe bananas using a fork or potato masher until smooth.

      Combine Wet Ingredients: Add tahini, maple syrup (or honey), melted coconut oil, eggs, and vanilla extract to the mashed bananas. Mix everything together until well combined.

        Sift Dry Ingredients: In a separate bowl, sift together the baking soda, baking powder, salt, all-purpose flour, and cocoa powder to ensure an even mix.

          Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the banana mixture, folding gently until just combined. Be careful not to over-mix.
