Ingredients

1 box of yellow cake mix

1/2 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

8 oz cream cheese, softened

1 large egg (for the cream cheese mixture)

2 teaspoons vanilla extract (for the cream cheese mixture)

2 cups powdered sugar, plus extra for dusting

1/2 teaspoon baking powder

1/4 teaspoon salt

Optional: Holiday-themed sprinkles

Instructions

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

In a large bowl, combine the yellow cake mix, melted butter, 1 egg, and 1 teaspoon vanilla extract. Mix until well combined and smooth.

In another bowl, beat the softened cream cheese until smooth. Add in the 1 egg, 2 teaspoons vanilla extract, powdered sugar, baking powder, and salt. Mix until creamy and fully combined.

Using a tablespoon, scoop out a portion of the cookie dough and roll it into balls. Place them onto the prepared baking sheets, spacing them about 2 inches apart.

Make a small indentation in the center of each ball with your thumb. Spoon a small amount of the cream cheese mixture into the indentation, filling it without overflowing.

Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden. The centers will remain gooey and soft.

Once out of the oven, let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack. Dust the tops lightly with powdered sugar and sprinkle with holiday-themed sprinkles, if desired.

Enjoy these festively delicious and gooey cookies with friends and family!
