1 cup all-purpose flour

1/2 cup granulated sugar

2 tsp baking powder

1/2 tsp salt

1/2 tsp ground cinnamon

1/4 cup unsalted butter, melted

1/2 cup milk

2 large eggs

1 tsp vanilla extract

Oil for frying (canola or vegetable)

1/2 cup granulated sugar (for coating)

1 tbsp ground cinnamon (for coating)

Prepare the dough: In a large bowl, whisk together the flour, 1/2 cup sugar, baking powder, salt, and 1/2 tsp ground cinnamon until well combined.

    Mix wet ingredients: In a separate bowl, mix the melted butter, milk, eggs, and vanilla extract until smooth.

      Combine the mixtures: Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Avoid overmixing; a few lumps are perfectly fine.

        Heat the oil: In a deep pot or fryer, heat about 2-3 inches of oil to 350°F (175°C). You can test it by dropping a small amount of dough into the oil; it should sizzle and rise to the surface.

          Form the donut holes: Using a small cookie scoop or spoon, carefully drop rounded tablespoons of dough into the hot oil, frying only a few at a time to avoid overcrowding. Fry until golden brown, about 2-3 minutes, turning occasionally for even cooking.

            Drain and cool: Once golden, remove the donut holes with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Let them cool slightly but not completely.

              Prepare the cinnamon sugar: In a shallow bowl, mix 1/2 cup sugar with 1 tbsp cinnamon.

                Coat the donut holes: While still warm, roll each donut hole generously in the cinnamon sugar mixture until fully coated.
