Ingredients
  

1 cup water

1/2 cup unsalted butter

1 tablespoon sugar

1/4 teaspoon salt

1 cup all-purpose flour

2 large eggs

1 teaspoon vanilla extract

Oil for frying (vegetable or canola)

1 cup granulated sugar (for coating)

1 tablespoon ground cinnamon (for coating)

Chocolate sauce or caramel sauce for dipping

Instructions
 

Prepare the Dough: In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat, stirring until the butter is fully melted.

    Incorporate Flour: Once boiling, remove from heat and quickly stir in the flour until a ball forms. Let the mixture cool for about 5 minutes.

      Mix in Eggs: Add eggs one at a time, mixing well after each addition until fully incorporated. Stir in vanilla extract until the dough is smooth and glossy.

        Heat the Oil: In a deep, heavy pot, heat about 2 inches of oil to 350°F (175°C).

          Pipe the Dough: Transfer the dough to a piping bag fitted with a star tip. Carefully pipe small bite-sized pieces (about 1-inch long) directly into the hot oil, cutting them with scissors as you go.

            Fry the Churros: Fry the churro poppers for 2-3 minutes, turning occasionally until golden brown and crispy. Don’t overcrowd the pan; you may need to fry in batches.

              Drain and Coat: Use a slotted spoon to remove the churros and drain them on paper towels. While still warm, mix the granulated sugar and cinnamon in a bowl, then roll each churro popper in the mixture until coated.

                Serve: Arrange the churro poppers on a serving plate and provide chocolate or caramel sauce for dipping. Enjoy!
