Ingredients
  

1 cup water

1/2 cup unsalted butter

1 tablespoon granulated sugar

1/4 teaspoon salt

1 cup all-purpose flour

2 large eggs

1 teaspoon vanilla extract

1 cup powdered sugar (for coating)

1 teaspoon cinnamon (for coating)

Oil for frying (vegetable or canola)

Chocolate or caramel sauce (for dipping)

Instructions
 

In a medium saucepan, combine water, butter, sugar, and salt. Bring to a simmer over medium heat until the butter is melted.

    Remove the saucepan from the heat and quickly stir in the flour until a dough forms and pulls away from the sides of the pan.

      Let the dough cool for about 5 minutes, then mix in the eggs one at a time, incorporating them fully before adding the next. Stir in the vanilla extract until smooth.

        Heat oil in a deep skillet or frying pot to 350°F (175°C).

          Transfer the churro dough into a piping bag fitted with a large star tip.

            Pipe small rings (about 1-2 inches in diameter) directly into the hot oil, cutting them off with scissors. Fry until golden brown, about 2-3 minutes, flipping halfway through.

              Remove the churros with a slotted spoon and drain on paper towels.

                In a shallow dish, combine powdered sugar and cinnamon. Toss the warm churros in the mixture until fully coated.

                  Serve the churro poppers warm with chocolate or caramel sauce for dipping.
