1 cup all-purpose flour

1/2 cup water

1/4 cup unsalted butter

1 tablespoon granulated sugar

1/4 teaspoon salt

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

Vegetable oil (for frying)

1/2 cup granulated sugar (for coating)

Instructions
 

Prepare the Dough: In a medium saucepan, combine the water, butter, sugar, and salt. Heat over medium heat until the butter is melted and the mixture comes to a boil.

    Add Flour: Remove from heat and quickly stir in the flour until a dough forms. Return to low heat, stirring continuously until the dough pulls away from the sides of the pan (about 1-2 minutes).

      Incorporate Eggs: Remove the dough from heat and let it cool for about 5 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until smooth.

        Heat the Oil: In a deep frying pan, pour in enough vegetable oil for frying (about 2 inches deep). Heat the oil to 350°F (175°C).

          Fry the Dough: Use a pastry bag fitted with a star tip to pipe small balls of dough into the hot oil (about the size of a golf ball). Fry in batches until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

            Coat with Sugar: In a bowl, mix the 1/2 cup of granulated sugar with ground cinnamon. While the churro poppers are still warm, roll them in the sugar mixture.

              Serve: Arrange the churro poppers on a serving platter. You can serve them with a side of melted chocolate or caramel sauce for dipping.
