1 cup long-grain white rice

2 cups vegetable broth (or water)

1 tablespoon olive oil

1 teaspoon salt

Juice of 2 limes

Zest of 1 lime

1/2 cup fresh cilantro, chopped

1/4 teaspoon black pepper

Optional: 1/4 teaspoon red pepper flakes (for heat)

Instructions
 

Rinse the Rice: Begin by rinsing the rice under cold water until the water runs clear. This helps remove excess starch for fluffier rice.

    Cook the Rice: In a medium saucepan, combine the rinsed rice, vegetable broth (or water), olive oil, and salt. Bring to a boil over medium-high heat. Once boiling, cover the pot, reduce the heat to low, and simmer for 18-20 minutes until the liquid is absorbed and the rice is tender.
