2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon salt

½ cup unsalted butter, softened

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

2 cups apples, peeled, cored, and chopped (such as Granny Smith or Honeycrisp)

½ cup chopped walnuts or pecans (optional)

¼ cup granulated sugar (for topping)

1 teaspoon ground cinnamon (for topping)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.

    In a medium bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, and salt. Set aside.

      In a large mixing bowl, beat the softened butter and brown sugar together until creamy and smooth. This should take about 2-3 minutes.

        Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

          Gradually add the dry ingredient mixture to the wet ingredients, alternating with the buttermilk. Begin and end with the flour mixture. Mix just until combined.

            Gently fold in the chopped apples and nuts (if using) until evenly dispersed through the batter.

              In a small bowl, combine the granulated sugar and the remaining 1 teaspoon of cinnamon for the topping.

                Pour the batter into the prepared loaf pan and sprinkle the cinnamon sugar mixture evenly over the top.

                  Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.

                    Remove from the oven and let the bread cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely before slicing.
