1 cup all-purpose flour

1/4 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/4 cup unsalted butter, melted

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

1/2 cup brown sugar, packed

1 tablespoon ground cinnamon (for rolling)

1 cup powdered sugar (for icing)

2 tablespoons milk (for icing)

1/2 teaspoon vanilla extract (for icing)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon.

      Combine Wet Ingredients: In a separate bowl, combine the melted butter, milk, egg, and vanilla extract. Mix until well combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir until just combined; do not overmix.

          Prepare for Baking: Using a spoon or a small cookie scoop, fill each muffin cup about three-quarters full with the batter.

            Combine Sugar and Cinnamon: In a small bowl, mix the brown sugar and the tablespoon of ground cinnamon. Sprinkle a small amount (about a teaspoon) over each filled muffin cup.

              Bake: Bake in the preheated oven for 12-15 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool for a few minutes in the pan before transferring to a wire rack.

                Prepare the Icing: While the bites are cooling, in a small bowl, combine the powdered sugar, 2 tablespoons of milk, and 1/2 teaspoon of vanilla extract. Whisk until smooth. Adjust the consistency with more milk if necessary.

                  Drizzle Icing: Once the bites are completely cool, drizzle or dip them in the icing. Allow the icing to set for a few minutes before serving.
